Yield: 4 servings
In a shallow pie plate, mix together eggs, milk and vanilla. Spray a large skillet with cooking spray. Heat skillet; place tortilla in egg mixture, gently turning to coat both sides. Place tortilla in hot skillet and cook 1-2 minutes or until golden brown. Remove from pan onto plate. Fill with 1/4 cup of fruit and roll up. Sprinkle with powdered sugar. Repeat with remaining fruit and tortillas.
