Potato Pancakes

For a lowfat breakfast, grill these cakes on the griddle

Yield: 18 pancakes

Ingredients

2 eggs
2 cups peeled, finely shredded, uncooked boiling or baking potatoes, well drained (abo
1/4 cup Bisquick Original baking mix
1/4 cup chopped green onions (about 4 medium)
1/4 cup milk
1 teaspoon salt
1 tablespoon shortening

Directions:

Beat eggs in medium bowl, using hand beater, until fluffy. Stir in remaining ingredients except shortening.

Melt shortening in 10-inch skillet over medium heat. Drop batter by tablespoonfuls into skillet; flatten with spatula. Cook about 3 minutes on each side or until golden brown.
